Service 101
Coach will provide step by step physical movements of service including items such as open-handed service, water service, correct placement of utensils, setting and clearing of plates, napkin folding, kitchen and dish-room etiquette, etc.

Hospitality 101
Coach will discuss how employees should communicate with guests including selling daily features, discussions on “Are you still working?” vs “Are you still enjoying?”, anticipating needs, creating regulars and increasing sales.

Wine Service 101
Coach will do a brief intro to wine: major regions, how it is made, how to read labels, etc. Coach will also demonstrate proper wine service training, on how to present, pour tastes, and when it is appropriate for a guest to send back wine. Coach will further demonstrate how to taste wine (sight, smell, sip, savor) and how to pair wines with food.

Custom Training
Custom training consists of four parts:

Secret Shop - Coach dines in the venue at a time designated by management to identify areas for improvement.

Development Meeting - Together, Coach and Management team will use the Secret Shop to layout objectives and service standards for the Coaching Presentation.

Coaching Presentation - Coach will present new service standards as a lesson to address objectives as outlined in the Development Meeting.

Follow-up Strategies - Coach will help management design and implement a variety of strategies for successful retention of service standards

Meet the Coach
Hospitality Coaching SD was started by Katie Smith in 2023. Her first job at 17 was as a host in East County San Diego. Due to the strong training program and fantastic mentorship, she fell in love with the industry. Since then she has held every position in the Front of House, and has worked in culinary meccas from Seattle to Philadelphia over her nearly 3 decade love affair. During this time she also obtained a teaching credential from San Diego State, which has shaped her way of thinking about how best to educate people in the hospitality industry. Her passion for food and beverage, paired with a desire to see San Diego’s culinary scene flourish are the driving forces behind Hospitality Coaching SD.
